Soaked raw sunflower seeds form a velvety base while nutritional yeast brings a cheesy, umami depth. Capers lend the briny, tangy note that stands in for anchovies in a traditional Caesar. Vegan Worcestershire, fresh lemon juice, tamari, Dijon mustard, black pepper, and extra virgin olive oil round out the flavors for a satisfying dairy-free, eggless dressing that still delivers the creamy texture you expect from Caesar.

Use this dressing on a Caesar-style salad with mixed greens and crispy roasted chickpeas, spread it on sandwiches, or drizzle it over roasted vegetables to boost flavor.

Ingredients

Raw sunflower seeds: Soaked and drained, they create a creamy, protein-rich base. Raw cashews or blanched almonds can be used instead.

Garlic clove: Fresh garlic adds savory depth. Roast for a milder note or use garlic powder if needed.

Nutritional yeast: Provides a nutty, cheesy flavor essential for a dairy-free Caesar.

Capers: Rinsed and drained to tame saltiness; chopped green olives can substitute if desired.

Vegan Worcestershire sauce: Adds savory complexity. If unavailable, a small mix of molasses and apple cider vinegar can be substituted.

Lemon juice: Freshly squeezed is best for bright acidity.

Tamari sauce: A gluten-free soy sauce that adds umami; low-sodium soy or coconut aminos are alternatives.

Dijon mustard: Gives tang and helps emulsify.

Black pepper: Freshly ground for the best flavor.

Water: Adjusts consistency; low-sodium vegetable broth can add richness.

Extra virgin olive oil: Adds a smooth, rich finish; avocado oil works if preferred.

How to Make Vegan Caesar Dressing

  • Blend the base: Combine the soaked sunflower seeds, garlic, nutritional yeast, capers, vegan Worcestershire, lemon juice, tamari, Dijon, black pepper, and water in a blender or food processor. Blend until creamy.

  • Emulsify with oil: With the blender running, remove the lid plug or open the spout and slowly stream in the olive oil until the dressing is smooth and well emulsified.

Recipe Pro-Tips

  • Soak sunflower seeds overnight: This softens them for a silky texture. For a quicker option, soak in hot water for 1–2 hours.
  • Rinse capers: Rinsing removes excess brine so the dressing stays balanced.
  • Add oil slowly: Pouring oil in a thin stream while blending helps create a stable, creamy emulsion.
  • Taste and adjust: Balance salt, pepper, and lemon to suit your preference.
  • Adjust consistency: Thin with water or lemon juice, or thicken with more soaked seeds as needed.

Serving Suggestions

This dairy-free Caesar dressing is excellent on a Vegan Caesar Salad with mixed greens and roasted chickpeas. It also works as a spread for BBQ tempeh sandwiches, a dip for plant-based “fried chicken” style cauliflower, or a sauce for roasted sweet potatoes.
