In a previous post I shared five-ingredient vegan recipes and noted that while I love great food, I don’t always have time to craft something elaborate. That doesn’t mean quick meals should be bland. These recipes were all prepared in under 15 minutes and are flavorful, nutritious, and easy to fit into a busy week. Save the longer extras like kimchi slaw or mango guacamole for days when you have more time, or buy them pre-made.

Korean BBQ Jackfruit Tacos | 15 Minute Vegan Meals

These tacos feel restaurant-worthy but take minutes to prepare. Use green (unripened) jackfruit in brine, which is often sold canned at Trader Joe’s, Caribbean and Asian markets, or online. Ripe jackfruit in syrup will not work for this savory dish. If jackfruit isn’t available, shredded mushrooms (baby bella, oyster, shiitake), extra-firm tofu, tempeh, or a vegan meat substitute all work well.

Prep Time: 5 minutes • Cook Time: 10 minutes • Total: 15 minutes • Serves: 2

Ingredients

  • 1 can green jackfruit, shredded with a fork
  • 3/4 cup vegan Korean BBQ sauce or regular vegan BBQ sauce
  • 1 ripe avocado, sliced
  • 1/2 cup shredded red cabbage
  • 1/4 cup fresh cilantro, chopped
  • 2 limes, halved
  • 6 corn tortillas (or 8 mini tortillas)

Instructions

  1. Place shredded jackfruit in a saucepan and cover with the BBQ sauce. Stir and simmer covered over medium-low heat for about 10 minutes—gentle simmer, not a boil.
  2. While it cooks, slice the avocado, shred the cabbage, chop cilantro, warm the tortillas, and cut the limes.
  3. Fill warm tortillas with jackfruit, avocado, cabbage and cilantro. Drizzle any remaining sauce over the tacos, squeeze fresh lime juice on top, and serve.

Jackfruit tacos are flexible: top with pickled onions, a quick slaw, or extra herbs. They’re perfect for a weeknight meal or meal prep.

Chickpea Tuna Sandwich15 Minute Vegan Meals | @sweetpotatosoulThis chickpea “tuna” mash has been a long-time favorite. It recreates the familiar flavors of tuna salad without animal products or concerns about toxins and cholesterol. Serve it in a sandwich, on avocado toast, in a Buddha bowl, as a dip for vegetables, or tossed into a salad. A food processor makes the texture easiest to achieve, but you can also mash by hand with a fork—just finely mince the celery if you go that route.

Chickpea Tuna Sandwich | 15 Minute Vegan Meals

Prep Time: 5 minutes • Cook Time: 10 minutes • Total: 15 minutes • Serves: 2

Ingredients

  • 14 oz can salt-free chickpeas, drained and rinsed
  • 1/4 cup vegan mayo (or 1/4 cup + 2 tbsp mashed avocado)
  • 1 tbsp Dijon or whole-grain mustard
  • 1½ tbsp ume plum vinegar (or apple cider/white vinegar)
  • 1 tsp dulse seaweed (optional, for a briny flavor)
  • 2 tsp celery seeds
  • 1 celery rib, chopped
  • 1/2 tsp freshly ground black pepper
  • 1/4 tsp cayenne pepper or chili flakes (to taste)
  • 4 leaves romaine or kale
  • 1 ripe tomato, sliced
  • 1/4 red onion, very thinly sliced
  • 4 slices toasted bread

Instructions

  1. Add chickpeas, vegan mayo, mustard, ume plum vinegar, dulse, celery seeds, celery, black pepper and cayenne to a food processor.
  2. Pulse briefly until the mixture is incorporated and minced; avoid over-blending—pulse no more than about 20 seconds.
  3. Lightly toast bread. Assemble sandwiches with lettuce, chickpea mash, tomato and onion. Wrap tightly in parchment for packing to keep the filling intact.

Broccolini Linguine 15 Minute Vegan Meals | @sweetpotatosoulPasta is a classic quick meal, and you can make it balanced by adding broccolini and mushrooms. One helpful technique to speed cooking and deepen flavor is “the smash”: press a heavy lid directly onto the vegetables while they cook so they release moisture and caramelize faster—this yields roasted-like flavor on the stovetop. A cast-iron pan and a second skillet lid work great for this.

Broccolini Mushroom Linguine | 15 Minute Vegan Meals

Prep Time: 5 minutes • Cook Time: 10 minutes • Total: 15 minutes • Serves: 4 (or 4–6)

Ingredients

  • 10 oz package baby bella mushrooms (or other mushrooms), thinly sliced
  • 1 bunch broccolini, stems and florets separated, sliced (about 2 cups)
  • 2 zucchini, thinly sliced
  • 1–2 tbsp grapeseed oil (or other high-heat oil)
  • 1/2 tsp sea salt, plus more to taste
  • 1 jar vegan marinara sauce
  • 1 tsp fennel seeds
  • 1 tsp red chili flakes
  • 1 package linguine (use amount for 4 servings; adjust if gluten-free)
  • Nutritional yeast and black pepper for serving

Instructions

  1. Bring a pot of salted water to a boil and cook the pasta according to package directions.
  2. While the water heats, thinly slice mushrooms, broccolini stems, and zucchini.
  3. Heat 1–2 tablespoons grapeseed oil in a large skillet over medium heat.
  4. Add mushrooms, broccolini stems (not florets) and zucchini to the pan, sprinkle with salt, spread evenly, then place a heavy lid directly on top of the vegetables so the lid touches them.
  5. Cook on medium for 5 minutes, then remove the lid, add broccolini florets, stir, replace the lid and cook another 5 minutes until the vegetables are tender.
  6. Remove the lid, stir in marinara, fennel seeds and chili flakes. Drain the pasta and transfer it to the skillet, toss in the sauce and vegetables, remove from heat, and serve with nutritional yeast and black pepper.
