Does Tofu Need to Be Pressed Before Marinating?

Yes. Tofu contains a lot of water, and pressing helps remove moisture so it can absorb the marinade. You can press a whole block or slice before pressing. Sliced pieces press faster because they expose more surface area.

How to Press Tofu

Place the tofu on a paper towel–lined plate or cutting board. Add more paper towels or a clean kitchen towel on top, then place another plate, cutting board, or a heavy pan on top. Press for 15–30 minutes or longer until the tofu feels firm.

How to Marinate Tofu

  • Press the tofu: Remove excess water following the pressing method above.
  • Mix the marinade: Combine the listed ingredients in a bowl or jar and whisk, or shake in a sealed container until smooth. For the jerk version, blend the ingredients until smooth.
  • Add tofu to the marinade: Slice or cube the pressed tofu, place it in a bowl, container, or zip-top bag, and pour the marinade over it. Turn to coat evenly and seal.
  • Marinate: Refrigerate for at least 2 hours and up to overnight for more flavor. You can marinate up to two days if desired.
  • Cook: Bake, sauté, grill, or air fry the tofu until it’s golden and tender. Use it in salads, wraps, stir-fries, bowls, or pasta.

How to Cook Marinated Tofu

After marinating, choose a cooking method that matches your desired texture.

Baking (Oven)

Preheat oven to 375°F. Arrange tofu with some or all of the marinade on a rimmed baking sheet lined with parchment or in a cast-iron skillet. Bake about 30 minutes, stirring halfway through, until edges are crisp. Thicker slices or steaks may need more time.

Tofu Piccata (Lemon Caper Marinade)

Lemon Caper tofu works with any cooking method, and you can also make a tofu piccata: brown the marinated tofu, then make a quick pan sauce by toasting a bit of flour in oil, adding wine and vegetable broth, simmering until thickened, and finishing with the tofu and capers for a silky, bright sauce.
