I used to buy energy bars, but over the years I started making my own. They’re simple, tasty, and far cheaper when prepared at home. If you own a food processor, you can easily make these Coco Date Balls: just blend a few wholesome ingredients, roll them into balls, and refrigerate.

For these Coco Date Balls I combine caramel-like Medjool dates with toasted pecans, raw cacao, and a scoop of MegaFood® Daily Energy Nutrient Booster Powder™ (optional). The mixture is rolled in shredded coconut for texture and extra flavor. These little bites deliver fiber, healthy fats, and sustained energy without relying on added sugar or caffeine.

Energizing Coco Date Balls

If you have a tree-nut allergy, substitute toasted pumpkin or sunflower seeds for the nuts—both work well in this recipe.

Ingredients 

  • 10 pitted Medjool dates
  • 3/4 cup toasted pecans, or other nuts
  • 1 tbsp raw cacao powder
  • 2 tsp MegaFood® Daily Energy Nutrient Booster Powder™, optional
  • 1/8 tsp salt
  • 1 cup shredded coconut

Instructions 

  • Place the pitted dates and toasted pecans in a food processor and pulse until the mixture becomes coarse and holds together. Avoid over-processing so it doesn’t turn into a paste.
  • Add the cacao, optional Nutrient Booster powder, and salt. Pulse briefly to combine.
  • Form the mixture into small balls, then roll each ball in shredded coconut, pressing gently so the coconut adheres.
  • Serve immediately or chill in the refrigerator to firm them up. Store in the fridge for best freshness.
