I don’t follow a strict low-fat, raw-food, or high-carb plan. In fact, I don’t subscribe to any specific diet. I chose veganism because I care about animals and the planet, and I also feel my best eating this way. I maintain my weight easily, have steady energy, and rarely get sick. Most importantly, I feel good both inside and out. No fads or complicated rules required. One of my go-to breakfasts that keeps me energized is this banana mocha smoothie.

In the video I show a typical day of eating: chocolate (raw cacao) and espresso for breakfast, plenty of fruit, cooked complex carbohydrates during the day, and even pasta for dinner. I’m not a model or celebrity — just a healthy, active woman who enjoys whole-food, plant-based meals. Eating vegan doesn’t need to be complicated to be nourishing and satisfying.
I hope these “What I Eat in a Day” videos give you practical ideas for simple, tasty vegan meals. This is a weekly series — check back each Friday for a new episode. If you know someone looking for plant-based meal inspiration, please share the post or video. My goal is to show that vegan eating can be easy, nourishing, and delicious.
