Each is quick, satisfying, and packed with healthy fat to keep you full.

Chickpea Avocado Mash on Toast

A creamy, savory mash that makes a perfect sandwich filling or toast topping. Similar to a chickpea “tuna” salad but with avocado.
Ingredients
- 1 can chickpeas, drained and rinsed
- 1 celery stalk, chopped
- 1 tbsp green onion, minced
- 2 tbsp fresh dill, minced
- 1 avocado, diced
- 2 tbsp ume vinegar
- 4 slices sprouted bread, toasted
Instructions
- Mash the chickpeas, celery, green onion, dill, avocado, and ume vinegar together in a large bowl. You can also pulse briefly in a food processor for a smoother texture.
- Serve the mash on toasted sprouted bread.

Arugula + Spinach Avocado Salad

A bright, slightly sweet salad with creamy avocado, beans for protein, and fresh peach for contrast.
Ingredients
- 8 cups spinach & arugula mix (or other salad greens)
- 1 avocado, chopped
- Juice of 1/2–1 lemon
- 1/4 tsp sea salt
- 1 cup black beans
- 1 peach, sliced
Instructions
- Place the salad greens in a large bowl. Add the chopped avocado, lemon juice, and sea salt.
- Massage the greens and avocado gently with your hands to soften them slightly and help the flavors meld.
- Toss in the black beans and sliced peach, then serve immediately.

Pineapple Avocado Smoothie

- 1 cup coconut water
- 1 cup pineapple
- 1/2 avocado
- 1 tbsp fresh lime juice
Instructions
- Place all ingredients in a blender and blend until smooth. Adjust liquid to reach your preferred consistency.
