I’m back!
I didn’t say goodbye because I didn’t expect to be away so long. Life got busy and I took a much-needed vacation to Denver with Maxx. It was great to unplug — for five days I did no work at all and it felt amazing. I’m starting to think the constant grind might be overrated. Or maybe I’m just a little lazy.
After this week I’ll get Sweet Potato Soul back on track. Expect weekly cooking and Q&A videos plus a new recipe each week featuring our ingredient of the month. This month we’re playing with figs!
Before we dive into figs, here’s a simple recipe for one of my favorite comfort snacks: popcorn.
Popcorn just tastes better when it’s popped on the stove — fresh, crunchy, and perfectly seasoned. It sounds intimidating, but stovetop popcorn is quick and easy when you follow a few simple steps. In minutes you’ll have a bowl of delicious popcorn ready for whatever toppings you love.

Perfect Stovetop Popcorn
Ingredients
- 3 tbsp grapeseed or canola oil
- 1/3 cup organic popcorn kernels
- 2 tbsp coconut oil, or more
- 1 tsp sea salt, or more to taste
- 2 tbsp nutritional yeast
Instructions

Heat the grapeseed or canola oil in a large pot over medium-high heat.

Drop three popcorn kernels into the oil and cover. When those kernels pop, you’ll know the oil is hot enough. Pour in the remaining kernels and spread them into an even layer.

Remove the pot from the heat and let it sit, covered, for 30 seconds. This brings the kernels up to a near-popping temperature so they pop together when returned to the heat.

Return the pot to the stove over medium-high heat. After a few seconds the kernels should begin popping. Once popping is rapid, gently shake the pot over the heat and keep the lid slightly ajar so steam can escape.

When popping slows to a few seconds between pops, remove the pot from the heat and immediately pour the popcorn into a large bowl.

Drizzle the coconut oil over the popcorn and toss to coat. Add the nutritional yeast and sea salt, toss again, and adjust seasoning to taste.
