What Are Sweet Potato Noodles?

Sweet potato noodles are sweet potatoes cut into long, thin strands—often made with a spiralizer—to resemble pasta. They’re a gluten-free alternative to traditional noodles and bring more fiber and micronutrients than refined white pasta. These spiralized noodles are made from whole sweet potatoes, different from Korean glass (japchae) noodles that use sweet potato starch.

How to Make This Sweet Potato Noodles Recipe

  • Make the almond-lime sauce: In a small saucepan over medium heat combine almond butter, water, lime juice, soy sauce, grated ginger, minced garlic, and maple syrup. Whisk until smooth and simmering. Reduce heat to low, cover, and simmer 10 minutes, stirring occasionally.

  • Cook the noodles: Add spiralized sweet potatoes to the skillet and pour the almond sauce over them. Stir gently, cover, and simmer over medium heat. Cook about 8 minutes, then check for doneness—sweet potatoes typically finish within 15 minutes. Avoid overcooking to prevent mushy noodles.

Almond Sauce

  • 1/4 cup creamy almond butter (or peanut butter)
  • 2/3 cup water
  • 1/4 cup freshly squeezed lime juice
  • 1/4 cup soy sauce (regular or tamari)
  • 1 tbsp minced or grated ginger
  • 1 tbsp minced garlic
  • 1 tbsp maple syrup (or agave)

Sweet Potato Noodles

  • 1 tbsp avocado oil (or another neutral oil)
  • 1/2 yellow onion, diced or thinly sliced
  • 1 Thai chili pepper or 1/2 jalapeño, minced (optional)
  • 1/2 red bell pepper, thinly sliced
  • 1 cup thinly sliced red cabbage
  • 1 cup chopped broccoli
  • 1 cup cubed extra-firm tofu (about 1/2 of a 12 oz package)
  • 2 medium sweet potatoes, peeled, tips removed, and spiralized
  • 1/2 cup chopped fresh cilantro, loosely packed
  • 1/4 cup chopped toasted almonds or peanuts

Instructions
