These no-bake bars are made in a food processor. If you don’t have one, a small chopper will work — a food processor is one of those kitchen tools that makes quick work of recipes like this and many others. It helps you create snacks, truffles, veggie burgers, and sauces in minutes.
The appeal of these bars is how simple and satisfying they are. They’re great for on-the-go snacking or as an after-school bite for kids. Vegan No-Bake Fig Walnut Bars

Ingredients
- 2 cup raw walnuts
- 2 cup dried figs, chopped
- 1/2 cup dates
- 1/2 cup vegan chocolate chips
- 1 tsp Maldon sea salt (or other large flaky salt)
Instructions
- Line a small baking dish (about 6-cup) with parchment paper.
- Add walnuts, chopped figs, and dates to a food processor. Pulse until the mixture comes together but still has some texture — avoid over-processing so you retain a bit of crunch.
- Press the mixture firmly and evenly into the prepared dish.
- Melt the chocolate chips in a heatproof bowl set over simmering water (double boiler) or briefly in the microwave, stirring until smooth.
- Remove the pressed mixture from the dish and cut into 12 squares while still firm enough to slice cleanly.
- Drizzle the melted chocolate over the squares.
- Sprinkle the chocolate-topped bars with Maldon or other flaky sea salt.
- Refrigerate for at least 45 minutes to set the chocolate and firm the bars.
- Break apart and enjoy.
