My favorite easy broccoli salad for almost 15 years — crisp-tender broccoli and crunchy almonds in a creamy, zesty tahini dressing. Ready in under 30 minutes.

Ingredients

Broccoli Salad

  • 1 head broccoli (about 4 cups / 1 lb), florets and stem cut into bite-size pieces
  • 3 Persian cucumbers (about 1½ cups), chopped into ½” pieces
  • ¼ cup red onion, diced
  • ¼ cup fresh dill and/or parsley, chopped
  • ½ tsp sea salt, plus more to taste
  • ½ tsp black pepper, plus more to taste
  • ¼ tsp cayenne, plus more to taste (optional)
  • ¼ cup toasted almonds, chopped or slivered
  • Fresh orange and/or lemon zest for garnish

Creamy Tahini Dressing

  • 2 tbsp tahini, stirred
  • 1 tbsp white/mellow miso (or 1 tbsp nutritional yeast)
  • 2 tbsp orange juice, freshly squeezed
  • 2 tbsp lemon juice, freshly squeezed
  • 1 tbsp water (or more to thin)
  • 1 tsp smoked paprika
  • 1 tsp ground cumin

Instructions

  1. Fill a pot with about 1 inch of water and place a steamer basket inside, making sure the water sits just below the basket. Cover and bring to a boil.
  2. Add the broccoli to the steamer basket and steam for 5 minutes until bright green and just tender. Avoid overcooking.
  3. Prepare an ice bath (about 4 cups ice covered with water). Use a slotted spoon to transfer the steamed broccoli to the ice bath and let sit 5 minutes to stop cooking.
  4. Make the tahini dressing: whisk together tahini, miso, orange and lemon juices, water, smoked paprika, and cumin until smooth. Adjust thickness with more water if needed.
  5. Drain the broccoli well in a colander, shaking off excess water. Return the broccoli to a mixing bowl.
  6. Add cucumber, red onion, and dill. Pour the tahini sauce over the vegetables and toss to coat. Season to taste with sea salt, black pepper, and cayenne.
  7. Garnish with toasted almonds and citrus zest. Serve chilled or at room temperature.
