Hello, September! You arrived quickly—where did June, July, and August go? It’s been hot so far: 88°, muggy, bright. I enjoy warm weather, so I’ll take it. One of the best parts of this month is the fresh figs. They’re so delicious—especially layered into a fig parfait.

To celebrate, I’m making figs the Ingredient of the Month on Sweet Potato Soul. I’ve got several fig recipes planned, and we’ll start with a simple breakfast: a vegan fig parfait. It’s an elegant, quick treat—layers of coconut vanilla yogurt, fig-pumpkin granola, and fresh Mission figs. Pure bliss in a glass.

This parfait is fast and healthy. I assembled mine in about two minutes. Figs add fiber and potassium, while coconut yogurt contributes beneficial cultures and healthy fats. If you love figs as much as I do, this is a great way to enjoy them.

Purely Elizabeth’s fig pumpkin granola is a favorite, but if it’s not available or you prefer a homemade option, try a simple granola recipe. SoDelicious makes excellent coconut yogurts in sweetened and unsweetened varieties. This recipe serves one—double it if you need more.

  • 3/4
    cups
    SoDelicious vanilla yogurt
  • 1/2
    cup
    granola
  • 4-6
    figs, thinly sliced or halved
