It’s part of my holiday cocktail series and feels like a little escape: brunch in Italy, a festive Christmas lunch, or a cozy snowy afternoon. Bright, luxurious, and comforting, this spritz comes together in just a few simple steps with 3–4 ingredients and no shaker required.
Aperol
Aperol brings a citrusy, slightly bitter sweetness that defines this cocktail’s character.
Sparkling Wine
Light and bubbly sparkling wine is the main component. It keeps the drink fresh and festive—perfect for daytime brunches or evening gatherings.
Pomegranate Juice
Just a splash adds color and a tart edge that pairs beautifully with Aperol’s citrus notes.
Pomegranate Arils (optional)
A few pomegranate arils as a garnish elevate the presentation, though the spritz is lovely without them.
This recipe requires no special equipment—just ice, Aperol, and sparkling wine. Pour the ingredients into a wine glass over ice, stir gently, and add the pomegranate arils if you like.

If you want to experiment, swap the pomegranate with any in-season juice or fruit—orange or blackberry work well. Prosecco or another sparkling beverage can replace the sparkling white wine. For a non-alcoholic version, use tonic, sparkling water, or non-alcoholic sparkling wine and swap Aperol for a non-alcoholic aperitif.

Ingredients
- 3 ounces Aperol
- 1 oz pomegranate juice
- 4 ounces sparkling wine
- pomegranate arils for garnish
Instructions
- Add ice to a wine glass. Pour in the Aperol, pomegranate juice, and sparkling wine.
