Start with good ingredients: ripe avocados and sturdy, flavorful bread. Sourdough is my top pick because its tang pairs perfectly with rich avocado and savory mushrooms, but any hearty whole-grain or sprouted loaf will work. Always toast the bread first so it holds up under the toppings.
The Perfect Avocado
Choose ripe avocados for the creamiest texture. A gentle press at the base should give slightly but not feel mushy. If you need avocados to ripen faster, place them in a paper bag at room temperature; to slow ripening, refrigerate them. For best results, buy avocados at staggered ripeness so you have some ready each day.

Make the Mushrooms Meaty
Choose dense, flavorful mushrooms—oyster, shiitake, maitake, and king trumpet are excellent together. Their varied textures and umami notes create a rich topping. For the meatiest result, cook the mushrooms over medium heat and press them with a heavy lid, plate, or bacon press once they begin to release liquid. This helps them brown evenly and develop a satisfying chew.

Ingredients
- 2 tbsp extra virgin olive oil
- 2 cloves garlic, minced
- 10–15 oz assorted mushrooms, tough stems removed and chopped (shred trumpet/king oyster if using)
- Sea salt, to taste
- 1 ripe avocado
- 2 slices sourdough bread, toasted
- 1 tsp sesame seeds
- 1 tsp nori or dulse seaweed flakes
- 1/2 tsp orange zest
- 2 tbsp fresh herbs, minced (dill, cilantro, mint and/or parsley)
- Black pepper, to taste
Instructions
- Warm the olive oil in a skillet over medium-high heat.
- Add the garlic and sauté until fragrant and lightly golden—avoid burning it.
- Reduce heat to medium, add the mushrooms and stir. Season with a pinch of sea salt.
- When the mushrooms release their liquid, press them with a heavy pan, lid, or bacon press to encourage even browning.
- Lower the heat to medium-low and cook 5–8 minutes, checking halfway to prevent burning; a little sticking is normal.
- Stir to loosen any bits from the pan and adjust seasoning with more salt if needed.
- Toast the bread and mash the avocado, spreading it over the warm toast.
- Top the avocado with the cooked mushrooms.
- Finish with sesame seeds, seaweed flakes, orange zest, minced fresh herbs, and black pepper.
- Serve and enjoy.
